Gray code is a binary code in which every two consecutive numbers have a difference of 1-bit. In K-map, the variables are written in gray code because the squares in K-map also differ from their adjacent squares by 1-bit. Gray code ensures that only one variable changes between each pair of adjacent cells. This property is used in K-map to simplify Boolean functions. The cells in a K-map are numbered in Gray code so that only one bit is changed and you can take variables of consecutive cells in common to cancel out the varying bit.
