      Are there different versions of bak kwa?
      There are two versions of Bak Kwa. The first one is chewier in texture with visible bits of thinly sliced pork in it. The other is more tender because it is made totally with minced (ground) pork. I personally prefer the first version but for the home cook, the minced (ground) pork version is easier to achieve.
      How much bak kwa can I buy?
      Please also note that their bak kwa has a 1kg purchase limit per person during the Chinese New Year period. To us, this was very odd as they were grilling large quantities of bak kwa and with the 1kg limit you would expect the queue to move swiftly.
      How do you cook a Kwa in the oven?
      Cover the meat with another sheet of baking paper, then use the rolling pin to spread the meat out in the tray evenly to around 2mm thickness. Gently remove the top layer of baking paper. Place the tray on the middle rack of the oven to bake for 15 mins at 160°C. Remove the bak kwa and cut into squares using a pizza cutter or kitchen scissors.
