Depends on the individual enemies within the faction. Fallen are mostly Arc, except captains and some dregs/vandals with Shrapnel Cannons which are solar. Vex are kind of a mix.

There are six damage types: Kinetic: White — the default damage type on most weapons, causes generic damage to any enemy. Solar: Orange — causes Solar damage. Arc: Blue — causes Arc damage. Void: Purple — causes Void damage. Stasis: Indigo — causes Stasis damage. Strand: Green — causes Strand damage.

For example: vex hobgoblins shoot red solar shots, vex wyverns shoot purple void shots, and vex fanatics explode dealing light blue arc damage. Look at what color their projectile is (or associated audio cues for melee weapons) and it should be relatively easy to deduce.
