How to make Chinese rojak sauce?Making Chinese rojak sauce is quite easy. You will need to mix shrimp paste, tamarind mix, brown sugar, white sugar, and toasted peanuts. You can also add chili padi for a spicy kick. Mix all the ingredients together until well-combined and you have a delicious rojak sauce. What are the secret ingredients for the best rojak sauce?
What is Indian rojak?Indian rojak is rather different. It’s a mixture of little prawn fritters, hard-boiled egg, shredded jicama, sprouts and cucumber, all drenched in a thick, sweet peanut and chilli sauce. I found a great Mamak (Indian Muslim) truck selling it and it’s become my favourite place for rojak in town.
What is the difference between Chinese rojak and Indian rojak?Chinese rojak, for example, features prawn paste or hei ko mixed with lime juice and tamarind, ginger buds, sugar, vinegar, and a little water with optional chilli paste. For Malay rojak, shrimp paste or belacan is used instead of prawn paste; the sauce is also pounded rather than mixed. The sauce for Indian rojak is a thickened mix of chilli.
How to make rojak?Add 500 ml (2 cups) water and blitz until smooth. Transfer the mixture to a saucepan, add the crushed peanuts, Sriracha chili sauce, salt, sugar and kurma powder. Bring to a gentle simmer over low-medium heat and gently cook for 15 minutes or until slightly reduced. Remove from the heat and set aside. We are now ready to assemble our rojak.
